Paula Mercure is the visionary behind Bamboo Walk, a groundbreaking Black-owned Caribbean restaurant in Brooklyn, NY. Born in Jamaica and now a proud resident of Baldwin, Paula was called to create Bamboo Walk during a 21-day spiritual fast in Florida in May 2020. Guided by what she describes as a direct word from God, she returned home with a clear mission—to open a restaurant at 1343 Utica Avenue that would not only serve exceptional food but also celebrate culture, community, and faith. Today, Bamboo Walk is known for its fine dining, cabana seating, and status as the first Caribbean drive-thru in the northeastern U.S.

Paula’s journey is rooted in faith, family, and fearless leadership. Drawing from her deep love of food, strong business instincts, and her mother Lorna’s culinary legacy, Paula built Bamboo Walk with intention and heart. She has created a space that not only honors her Jamaican roots but also uplifts Black immigrants and women of color. Supported by her husband Pierre Mercure and a team of community-minded investors, Paula leads with purpose—proving that with vision, resilience, and divine direction, bold dreams can become powerful realities.

Dexter Royes is the Executive Chef at Bamboo Walk and the creative force behind its bold, island-inspired cuisine. Internationally trained and deeply rooted in Caribbean culinary tradition, Chef Dexter brings decades of expertise to the kitchen. His partnership with founder Paula Mercure and matriarch Lorna Taylor has resulted in a menu that’s both nostalgic and inventive—highlighting dishes like tender curry goat, rich oxtail stew, and Escovitch snapper, all plated with finesse and intention. Each dish tells a story, and each flavor is crafted to leave a lasting impression.

Chef Dexter’s philosophy is simple: ignite creativity and inspire excellence in every bite. He leads with passion, setting a standard of precision, elegance, and warmth that defines the Bamboo Walk experience. His goal is to cultivate an environment where both team and guest are immersed in the “wow” factor—through flavor, presentation, and atmosphere. Under his leadership, Bamboo Walk has become not just a restaurant, but a destination where Caribbean heritage is honored through culinary artistry.
